SNAP was founded by Negusse Debela in Addis Ababa in 2008 with a focus on improving the quality and consistency of Ethiopian specialty coffee.\u003cbr\u003e\u003cbr\u003e\n\nIn 2019, SNAP established its Danche wet mill within Chelbesa to work more closely with farmers in the surrounding community and purchase ripe red cherry from nearby producers. One of the more distinctive features of the station is its ceramic fermentation tanks. The ceramic helps retain heat during fermentation while contributing to the clean, precise character for which coffees from the station have become known.\u003cbr\u003e\u003cbr\u003e\n\nThe coffee is composed primarily of Wolisho and Dega, two varieties closely associated with the extraordinary genetic diversity of Ethiopian coffee. After ripe cherries arrive at the station, they are carefully sorted and processed using a traditional washed method before the parchment is dried.\u003cbr\u003e\u003cbr\u003e\n\nWorka Chelbesa is an expression of both place and collective production. Rather than coming from a single estate, the lot represents the work of hundreds of small farms whose coffee is brought together through the washing station. Today, that generation carries forward a long-standing commitment to producing exceptional coffee while working in balance with the people, land, and communities surrounding their farms.\u003cbr\u003e\u003cbr\u003e\nHamacas is composed of Caturra and San Ramon and undergoes a carefully managed washed process. After harvest, ripe cherries are held for approximately 36 hours before being sorted through a siphon to separate the highest-quality fruit. The coffee is then depulped and undergoes an additional 16-hour dry fermentation before being washed and moved to the patio for drying.\u003cbr\u003e\u003cbr\u003e\nDrying takes approximately 15 days and is managed deliberately throughout the process. During the first seven days, the coffee is turned every hour while drying under direct sunlight. From the eighth through fifteenth day, turning is reduced to every four hours, allowing the coffee to finish drying gradually and evenly.\u003cbr\u003e\u003cbr\u003e\nFor us, Hamacas is a coffee rooted in continuity: generations of knowledge, a remarkable growing environment, and the careful work that happens between picking a ripe cherry and preparing a coffee for export.
